Kenya - Kabingara AA - 250g After Muchagara, here's Kabingara, a new coffee from the Kirinyaga region of Kenya. Once again, this is a very sweet coffee (blond caramel, maple syrup), with floral notes (hibiscus), lime and rhubarb aromas, whose refreshing acidity is superbly complemented by the roundness of yellow peach. More than 800 farmers supply the Kabingara washing station with coffee cherries, cultivating small farms of 250 to 350 trees at altitudes of 1,600 to 1,800 meters. The high altitudes offer warm days and cool nights, favoring the production of sweet, dense cherries. On arrival at the washing station, the cherries are sorted, then pulped and fermented. After fermentation, the coffee is washed with clear water and dried on raised beds. Workers frequently rake the parchment to ensure even drying. They cover the drying coffee during the hottest hours of the day, to maintain slow, even drying, and at night, to protect the coffee from humidity. Depending on conditions, drying can take between 7 and 14 days.
